    1 tbsp extra virgin olive oil
    1 c. fresh spinach
    2 cloves of garlic
    4 sun dried tomatoes, juliened
    2 slices of fresh mozzarella, diced
    6 basil leaves, shredded
    2 boneless skinless chicken breasts
    pot of boiling water


heat olive oil in a skillet on medium heat
mince garlic cloves and saute until fragrant
add mushroom pieces and saute
add spinach and saute until wilted, and set aside

dice and juliene the mozzarella and sun dried tomatoes. Toss with cooled cooked spinach and mushrooms.

layer the chicken breasts between two slices of aluminum foil and pound with a hammer or rolling pin

divide the filling in half and spead over chicken breasts. Carefully roll the chicken breasts and filling together in the aluminum foil, sealing tightly.

Boil 4 cups of water in a pot and add the chicken packets, cooking for 20-25 minutes.

Serving Size: makes 2 stuffed chicken breasts
