Ingredients

0.5 cup butter
0.75 cup caster sugar
2 eggs
1 tablespoon vanilla essence
1 tablespoon cinnamon powder
1 tablespoon Chinese Five Spice powder
grated rind of one orange
1 teaspoon sea salt
2 large mashed bananas
1 cup yoghurt
1.5 cups chopped walnuts
juice of the orange
0.5 cup water
1 tspn bicarb soda
2.5 cups flour
Tips
mash the bananas and immediately add the yoghurt and orange juice to them to stop them going brown
Directions
Heat the oven to 175C (350 F). Lightly grease one loaf tin 26cm x 10cm x 10cm and line with grease proof paper.
Warm butter until very soft but not completely melted and beat in sugar then the eggs. Beat until light. Add the spices, grated orange rind, vanilla essence and salt. Then add the yoghurt, mashed bananas, orange juice, water and walnuts. Sift the flour and bicarbonated soda three times and fold into wet mixture. Bake immediately, turning oven down to 160C (325 F) for 75 minutes - cover with foil after 55 minutes. Turn out onto wire rack to cool.
