Ingredients

    1 lb sausage
    1 C mushrooms
    1c green peppers (I omit these)
    2 c shredded cheese (I use cheddar or mex blend)
    8 eggs, lightly beaten
    1/4 c heavy whipping cream
    1 tsp salt
    1 tsp ground mustard
    pepper to taste

Directions

Cook sausage crumbled--set aside. Sautee mushrooms and peppers in non-stick cooking spray. Combine sausage, veggies, and cheeses in medium bowl, reserving 1 c. cheese. Combine eggs, cream, salt, mustard and pepper--mix well. Coat 8x12 glass baking dish with non-stick spray and layer the meat mixture evenly across the bottom. Pour egg mixture over the top, making sure to fully cover the first layer. Sprinkle remaining cheese over top. Bake at 350 for 40 minutes. Makes 8 servings.
