Introduction

A hearty easy to make fish chowder that's low in fat and carbs. A hearty easy to make fish chowder that's low in fat and carbs.
Number of Servings: 4

Ingredients

    1 tsp olive oil
    1/2 medium onion chopped
    1/2 cup carrot chopped
    1 clove garlic
    1 14.5 oz can diced tomato
    29 oz water
    2 tsp Badia Complete Seasoning
    1 cup chopped acorn squash
    1 cup frozen Italian Blend vegetables
    1 filet of cod fish, boneless skinless cut in chunks
    2 filet of perch, boneless skinless cut in chunks

Tips

Any firm white fish can be substituted for perch and cod. Any hard squash can be substituted for acorn squash.


Directions

Put the first 4 ingredients in a sauce pan. Saute for 5 minutes. Add canned diced tomato, Badia Complete Seasoning, acorn squash, frozen mixed vegetables, and water, simmer for 30. Add pieces of fish, simmer for 10 minutes. Stir occasionally through out cooking process.

Serving Size: Makes 4-6 servings. I'm a Bariatric patient so this is at lest 6 servings for me.
