    1lb. chicken breast
    2TBSP. olive oil
    2lbs. sweet potatoes, peeled and cut into sticks
    1/2 lb. white button mushrooms
    3 large leeks
    5 cloves garlic
    1/2 tsp. dried rosemary
    1/2 tsp. salt
    1/2 tsp. ground pepper


You can also make this meal in a slow cooker set on low for 4.5 hours.


1. Cut chicken breast into 2-by-2 inch pieces. Set aside.

2. Heat oil in a skillet on medium-high, Place chicken pieces, sweet potato sticks, mushrooms, leeks, garlic, rosemary, salt and pepper in the skillet and stir.

3. Cover skillet with a lid and reduce heat. Cook on low until potato sticks are tender, about 35 minutes.

4. Remove from skillet and serve.
