Introduction

Ingredients

    3.5 c pumpkin seeds (shelled, raw, unsalted)
    2 teas. canola oil
    1 Tbsp tamari sauce, organic low sodium
    1/4 - 1/2 teas. cayenne (red) pepper (depending on how spicy you want them!)

Tips

If you want some diversity, you can use 2 cups of pumpkin seeds, and make up the difference with raw cashews &/or almonds

Note -- the pepitas get spicier the longer they are stored.

Directions

Heat oil in a large (12-in) nonstick fry pan over medium heat. Add pumpkin seeds and saute, stirring often for 5 or more minutes or until nuts begin to sizzle and pop. Immediately drizzle tamari over mixture and sprinkle with cayenne and lemon juice. Mix very well. Then, remove from heat. Cool for a few minutes and serve. Leftovers can be stored at room temperature for at least one week.

Serving Size: should make 14 quarter-cup servings
