Introduction

A light salad alternative. Good anytime of year, but I prefer late spring through early fall. Just tastes better. A light salad alternative. Good anytime of year, but I prefer late spring through early fall. Just tastes better.
Number of Servings: 8

Ingredients

    1 C White Rice
    1 C Chopped Raw Carrots
    1 C Black Beans
    100 grams Green Olives
    2 tbsp Light Italian Dressing

Directions

Cook the rice as directed
While rice is cooking, drain and rinse the beans
Cut carrots into slices and then quarter the slices
In a medium-to-large serving bowl add the carrots, beans and olives
When rice is done and drained, add to serving bowl.
Add the Italian Dressing

Serve chilled when possible
