Ingredients

4 eggs + 1 egg white
1 TB Coleman's dry mustard
salt & pepper to taste
2 strips semi-cooked bacon, diced
1/2 small onion, chopped
4 fresh mushrooms, chopped
1/4 cup pre-cooked broccoli, chopped
1/4 red bell pepper, chopped
2 TB finely shredded cheddar
olive oil PAM spray to coat pan
Tips
You can cook any ingredient separately for those that don't like something in particular & only add that ingredient to "your side". (Ex.: I cook mushrooms alone.)
Directions
In large bowl, whisk eggs & egg white with dry mustard. salt & pepper to taste. Set aside.
Place bacon in fry pan, saute 30 seconds; add onions & peppers. Saute another 30 seconds. Add mushrooms. Saute until semi-soft. Add broccoli. Saute until warm. Remove all from pan.
Spray pan with PAM. Add egg mixture. Cook unti firm enough to add bacon & veggies. Fold egg over, continue cooking until egg is firm. Sprinkle top with shredded cheese. Cut in 1/2 to serve 2.
