Ingredients

    Parsley, flat-leafed - 2 cups
    Mint - 1 cup
    2 tomatoes diced
    1/2 long English cucumber diced
    4 spring onions (scallions) sliced
    1 avocado - diced

    Dressing:
    1/4 cup lemon juice
    1 Tbsp. extra virgin olive oil
    2 tsp. garlic (minced)
    salt & pepper to taste

    Bulgur (dry cracked wheat) - 1/4 cup
    Water - 1 cup



Tips

If the bulgur doesn't absorb all the liquid after 1/2 hour, strain the excess liquid through a sieve.


Directions

Add the bulgur to water in pan and heat to boiling. Turn off heat and let sit for about 1/2 hour until all the water is absorbed. Fluff it up with a fork.
Combine the lemon juice, olive oil, garlic and salt and pepper.
Dice the tomato, cucumber and avocado
Chop the parsley and mint
Add all the ingredients together and toss.

Serving Size: Makes 5 - 1 cup servings
