Ingredients

    15-30ml/1-2 tbsp olive oil
    2-3 garlic cloves, chopped
    1 onion, chopped
    25g/1oz fresh root ginger, peeled and chopped
    5-6 carrots, sliced
    30-45ml/2-3 tbsp shelled pistachio nuts, roasted
    1 small firm, ripe mango, peeled and coursley diced
    a bunch of fresh parsley, finely chopped
    juice of half a lemon
    salt

Serve with yogurt and a salad


Directions

Heat the olive oil in a heavy frying pan or wok. Stir in the garlic, then the onion and ginger. Fry for 1 minute. Add the carrots, tossing them in the pan to make sure that they are mixed with the flavouring ingredients, and cook until they begin to brown.

Add the roasted pistachio nuts, ground cinnamon and gently mix in the diced mango. Sprinkle with the finely chopped fresh coriander, season with salt and pour over the lemon juice. Toss to mix and serve immediately.
