Ingredients

1 c. quinoa, rinsed
2 c. reduced-sodium chicken broth
1 granny smith apple, diced
1/3 c. dried cranberries (craisins)
3 scallions, chopped
3 tbsp. citrus herb dressing
2 tbsp. toasted walnuts
Tips
For an attractive presentation, serve on top of a large lettuce lear. You can make this ahead of time and refrigerate until needed. Put the walnuts on just prior to serving.
Directions
1. Combine quinoa and broth in medium saucepan; bring to boil. Reduce the heat and simmer, covered, until the quinoa is tender, about 10 min. Drain.
2. Remove from heat and let cool (about 10 min)
3, Add the apple, cranberries, scallions, and dressing to the quinoa; toss to coat. Sprinkle with walnuts and serve.
