Ingredients

    This is my first time making this, all measurements are approximate except the bulgar and olives.

    1/2 Cup dry cracked bulgar wheat prepared according to package instructions. (just water) set aside to cool.

    1-2 handfuls of arugala

    While bulgar chills dice onion, orange & yellow peppers, tomatoes, mushrooms, and if necessary olives.

    Combine veggies, bulgar, olive oil, vinegar, and lemon juice. Keep chilled.

Tips

Colorful addition to any meal, bright flavors and contrasting textures make it a keeper!
