Ingredients

4 large bell peppers, any color
1/2 lb Italian turkey sausage
1-2 clove garlic, minced
1 onion, chopped
8 oz bag shredded carrots
15 oz can white beans (great northern or other)
8 oz tomato sauce
1 C cooked rice
2 tsp Italian seasoning
1/4 tsp ea salt & pepper
4 T grated Parmesan cheese (divided)
Tips
Save leftover rice to use in this dish.
Directions
Cut off the tops of the peppers and remove the membrane and seeds. Trim the base slightly if needed so the peppers can stand upright. Immerse the peppers in boiling water for 3-4 minutes. Remove with tongs and invert to drain, set aside.
Cook sausage over medium heat until browned. Break sausage apart as it cooks. Remove to a bowl, set aside.
Add 1/4 C water to pan. Using wooden spoon loosen sausage bits from bottom of the pan. Add onion, carrots and garlic to the pan and cook for 4-5 minutes or until tender. Combine the veggies with the sausage.
To the sausage mixture add the beans, tomato sauce, cooked rice, Italian seasoning, salt, pepper
and 2 T parmesan. Stir well to combine.
Stuff peppers. Place peppers in a baking dish and cover with foil. Bake at 350* for 30-40 minutes or until heated through. Top with remaining parmesan.
