Introduction

Ingredients

    3 c quinoa
    1 red or purple bell pepper
    1 zucchini
    2 granny smith apples
    1 cup raisins OR 1/2 c currants + 1/2 c craisins
    1 c salted cashews
    1 bunch of curly parsley

    dressing:
    1 c olive oil
    1/3 c lemon juice
    1/2 tsp lime juice
    2 tsp curry powder
    2 tsp cinnamon

    cayenne, salt, pepper to taste

Directions

cook the quinoa according to package instructions. Cool.

Chop all of the choppable ingredients into very small pieces. Mix in with the cooked quinoa. Pour dressing over and stir.
