Introduction

This salad is delicious, you can mix it up a bit and swap out ingredients. Make sure to pick up Sumac, it really makes the dish! (Along with the pomegranate seeds)

Number of Servings: 6

Ingredients

    Salad:
    1-2 Green Bell Peppers
    2 Cucumbers
    1 cup grape or cherry tomatoes
    1 cup Pomegranate Seeds
    Handful of assorted lettuce shredded
    1/4 cup sumac (this seasoning is DELICIOUS and located at Middle Eastern shops, etc.)
    Mint (I usually use about 10 leaves, but this is completely up to your preference)

    Dressing:
    3-4 Lemons (about 1/2-3/4 cup juice)
    1/4 cup olive oil
    1 clove garlic

Directions

Dice it all put the dressing together and then drench the salad. This is a very easy way not to get tired of salads on diets.

Serving Size: Makes about 8 cups
