Ingredients

1 (5 oz. package) Chicken of the SeaŽ Premium Wild-Caught White Albacore Tuna in Water
2 tablespoons thinly sliced Red Onion
2 tablespoons diced Red Bell Pepper
˝ Apple, unpeeled, cored and diced
1 ribs Celery, diced
2 Scallions (thinly sliced)
1 hard cooked egg, diced
1 small clove Garlic, minced
2 tablespoons Kalamata, Green Olives, pitted, sliced
2 tablespoons Flat Leaf Parsley, chopped
2 tablespoons EVOO
1-˝ tablespoons dry Red Wine or Red Wine Vinegar
Sea salt and Freshly Ground Pepper
3 cups spinach leaves
OR
6 slices Whole Grain Bread

Directions
1. Combine the tuna, red onion, red bell pepper, apple, celery, scallions, egg, garlic, green olives and flat leaf parsley and toss together in a large bowl.
2. Combine the olive oil, red wine or red wine vinegar, and salt and pepper in a small bowl and pour over the tuna and vegetable mixture, and toss until just combined.
3. Serve on a bed of spinach or whole grain bread.
Serving Size: Makes 3 servings of salad (or sandwich if you add whole wheat bread)
