Introduction

Ingredients

    -10 slices of bread (cubed up)
    -1 lb of boneless skinless chicken breast
    -1 c potatoes, diced
    -1 c celery, diced
    -.5 c carrots, diced
    -1 tbsp parsley
    -4 c. skim milk
    -2 c. chicken broth
    -1.25 c. egg substitute
    -.25 c. butter, melted and cooled
    -1 tsp salt
    -.5 tsp pepper

    -You can serve with chicken gravy, but this is NOT included in the calorie count.

Directions

Spread the bread cubes in a single layer on ungreased baking sheets (I needed 2 sheets). Bake at 350 degrees for 15-20 minutes. They should be slightly brown and crisp. While the bread is baking, cook the chicken breasts until no longer pink and shred the meat (I boiled the chicken like as if I were making soup since my oven was full with the cookie sheets).

Put the baked bread cubes in a large bowl. Add the chicken, potatoes, celery, carrots, and parsley. In another bowl, add the milk, broth, eggs, butter, salt, and pepper. Stir. Pour the liquid mixture over the bread mixture. Toss to coat the bread.

Pour everything into a greased casserole dish. Bake, uncovered, at 350 degrees for 45 minutes, stir, and bake for another 45 minutes (or until a knife inserted into the center comes out clean).

Serving Size: Makes 12 servings
