Introduction

Ingredients

    1 large onion, chopped
    3-4 garlic cloves mashed, chopped
    10-15 turkey pepperoni slices, chopped
    1 tablespoon of olive oil
    2 medium eggplants
    3-4 zucchini
    1 contaier of sliced mushrooms, any type
    1 can of tomato puree (or crushed, my preference is puree)
    1 small can of tomato paste
    spices: salt and pepper, oregano, parsley, basil, cayenne, garlic powder, thyme, a little sugar to balance the tomato acidity, and anything else you'd like.

Directions

In a large pot, sautee the onion, garlic, turkey pepperoni and olive oil over medium heat until onions are translucent. Peel and cube the eggplant, and add to onion mix and stir. Slice zucchini and add to pot along with the mushrooms. Let it all simmer for about 20-25 minutes then drain excess liquid. Add the tomato puree and paste and all the spices, stir and continue to simmer on low flame for about an hour and a half to let the flavors blend, stirring occasionally. Delicious plain at any temperature, or with chicken over pasta with grated cheese. A staple in my house.
