Ingredients

Romaine Lettuce (salad), or, little gem - outer leaves
Chicken Breast, no skin, 2 breast, bone and skin removed - medium - cut into strips
Shallots, 2 tbsp chopped
Garlic, 3 clove, finely chopped, or, crushed
$ rashers of unsmoked bacon
Manuka honey per 1 tbsp
Dijon Mustard, 3 tbsp
Extra Virgin Olive Oil, 2 tbsp
Dried Chilli flakes, 1 tsp
Juice of 1 lemon
10 Cherry tomatoe's, halved
Basil Fresh, 2 tbsp, chopped
Tips
- Can add white wine vinegar, if desired
- Serve with crusty bread, if desired
- Sprinkle with parmesan shavings, if desired
Directions
- Split whole rommaine leaves between two dishes
- Finely chop garlic and onion and saute in 1 tbsp of olive oil in a frying pan until soft
- cut chicken into strips and add to the pan; frying until cooked through
- Divide chicken, onion and garlic between the two plates
- Add the other tbsp of olive oil to the pan and fry bacon until crispy. Remove amd dry on kitchen paper
- Add remaining ingredients to the juices of the pan and fry for a few mins until tomatoes cook
- Crumble bacon between two plates and then add sauce mixture evenly across
