Introduction
This alien-looking vegetable has a texture and taste somewhere between a potato and a radish... It makes a wonderfully tasty side dish and is equally good warmed over in the skillet or microwave as leftovers. Ingredients
-
3 medium kohlrabi
2 Tbsp Extra Light Olive Oil
2 cloves Garlic, peeled and chopped/pressed
3 Tbsp grated parmesan cheese
2 Tbsp grated romano cheese
1/4 C. shredded Asiago cheese
Salt and pepper to taste
Tips
Add a little worcestershire sauce or a sprinkle of dried red pepper to the olive oil mixture to increase the "kick."
Directions
Preheat oven to 400F.
1. Remove stems and leaves from Kohlrabi bulbs. Peel with paring knife or vegetable peeler, then slice in half, then into 1/8 - 1/4 inch-thick slices.
2. In a large ziplock back, combine oil, garlic, salt and pepper.
3. Add kohlrabi slices to ziplock bag and massage until each slice is evenly coated.
4. Place prepared kohlrabi slices in a single layer on a large baking sheet.
5. Bake for approximately 30 minutes (Tops should be lightly toasted. Decrease cooking time slightly if using thinner slices.)
6. Sprinkle with the 3 cheeses and return to oven. Either broil for just long enough to toast the cheese, or bake for an additional 10 minutes until the cheese is melted and bubbly.
Remove from oven.
Serve hot.
