Introduction

Refreshing summer bean salad. Low on sodium and high in fiber and protein. Refreshing summer bean salad. Low on sodium and high in fiber and protein.

Ingredients

    Blackeye Peas- 1 bag dry
    Onion- 1 cup
    Garlic- 0.25 cup
    Tomato- 1 cup
    Green Bell- 0.5 cup
    Olive Oil- 6 Tbsp
    Cider Vinegar 0.25 cup

Directions

Soak beans overnight.
Cook beans according to package then cool.
Chop all other ingredients.
Mix all ingredients together and chill.
