Introduction

Easy way to get my son and husband to eat veggies for breakfast. Easy way to get my son and husband to eat veggies for breakfast.
Number of Servings: 6

Ingredients

    6 large organic eggs, 2 cups egg substitute, 1 medium zuchinni grated finely, 1 medium red bell pepper pureed, 1 medium summer squash pureed, dash of sea salt, dash of pepper, tablespoon of basil dried, 2 tablespoons majoram dried, 1 tablespoon skim milk, 1 tablespoon paprika, 2 sprays pam cooking spray

Directions

Start with the eggs, scramble them in a large bowl, then add your egg substitute, then pureed summer squash, pureed bell pepper ( we use red but any color you prefer will do), the zuchinni is not chopped but grated ( 1 medium) we add that to the bowl, then all the spices and mix well. Lastly add the milk and mix again. Cook over a lightly sprayed pan ( we use pam spray) on medium heat till cooked through mixing occasionally. My son loves these. ( in the winter we sub butternut squash for the summer squash)

Serving Size: serves a family of 4 minimum with 1/2 cup or so servings
