Introduction
(Adjusted from WW recipe) I don't know how, but this have a creamy flavor. It must be the garlic maybe. Anyway, if you want to add pasta, add 2 oz of ww linguine broken into small pieces and then count the extra nutritional info for the pasta. Ingredients
-
1 T olive oil
1 onion, chopped
3 garlic cloves, minced
2 celery stalks, diced
1 carrot, diced
1 t dried basil
1 (10oz) package frozen mixed vegetables
4 C low sodium vegetable or chicken broth
1 (14.5 oz) can diced tomatoes
1 (15.5 oz) can cannellini beans, rinsed and drained
Directions
1. Heat the oil in a large saucepan over medium-high heat. Add the onion, garlic, celery, carrot, and basil; cook, stirring occasionally, until the onion softens, about 3 min. Add the mixed veggies and cook until thawed, about 4 min. longer. Pour in the broth and tomatoes; bring to a boil. Reduce the heat and simmer, uncovered, until the carrot is tender, 15*20 min.
2. (Add pasta now if doing so, simmer for 12 min.) Stir in the beans and cook until heated through, 2-3 min. longer.
