Introduction

Ingredients
SPICE CAKE:
2 Eggs (separated)
1 C Sugar
1/3 C Butter (unsalted)
2 1/4 C Cake Flour
1 tsp Baking Soda
3/4 tsp Baking Powder
3/4 tsp Cinnamon, ground
3/4 tsp Cloves, ground (or more, if you want)
1 tsp Salt
1/2 C Buttermilk
1 C & 2 Tbsp Buttermilk
FROSTING:
About 8 C Powdered Sugar
1/2 C Half and Half Cream
1 Stick Butter, unsalted
1 Tbsp Vanilla
some cinnamon & nutmeg
Tips
Whenever you're using butter in a cake recipe, it's best to let it sit out and get room-temp soft, so it's easier to work with.
Also, I make two cakes in 8 in. pans and layer them. This recipe is perfect for it, and the frosting works out with a little bit to spare for touch-ups, if needed.
Directions
SPICE CAKE:
Beat the egg whites until frothy, slowly add in sugar, while beating until glossy and stiff.
Mix butter to soften, then add sifted dry ingredients and 1/2 C Buttermilk. Mix together.
Add the rest of the Buttermilk and the egg yolks, and mix. Fold in the egg mixture.
Pour into greased/floured pans and bake at 350 for 30-35 mins.
FROSTING:
Mix butter
Add a little half-n-half
Mix
Add a little Powdered Sugar
Mix
Add some half-n-half again, and repeat until the half-n-half is gone, and the frosting is the correct consistency. At some point in there, add the vanilla and also some cinnamon and nutmeg to taste.
Serving Size: makes 16 servings if cake is sliced as such
