Ingredients

    4 (1/8 in) slices unpeeled ginger
    2 C sliced onion
    5 C low salt beef broth
    2 T Sugar
    2 T Fish sauce
    5 Whole star anise
    3 Cloves
    4 C Water
    2 C Rice noodles
    4 oz flank steak
    1 C Bean sprouts
    1/2 C vertically sliced onion
    1/2 C green onion, chopped
    12 Basil leaves
    4 Lime wedges
    chopped, seeded serranos (optional)

Directions

1. Saute ginger and 2 C onion about 4 min.
2. Combine next 5 ingredients in saucepan. Bring to boil & simmer for 30 mins. Strain to bowl. Discard solids and return broth to pan.
3. Cook steak 4 min on each side on medium high heat. Cut diagonally.
4. Bring broth to a boil. Add rice noodles and beef. Garnish with sprouts, green onions, basil, onions etc.
