For a vegetarian variation cook everything except chicken, add 2 cups rinsed and drained black beans with cilantro before last hour.


Spray crock pot with canola oil, add all ingredients except cilantro, cook on high 4-6 hours, add cilantro during last 30-60 min.

Serve with lime, baked corn chips, light sour cream--yumm
