Ingredients

1/2 cup coconut flour
1/2 tsp baking soda
1/8 tsp salt
1 serving ener-g egg replacer, prepared
2 powdered Just Whites egg whites (4 tsp) + 1/4 c water
2 tbsp xylitol-based honey substitute
1 tsp coconut extract
2 tbsp unsweetened applesauce
1/2 cup unsweetened almond milk
1/3 c truvia (or more to taste)
for glaze:
scant 1/2 cup z-sweet xylitol powdered sweetener
scant 1 tsp coconut extract
1-2.5 tsp water
+ 2 tbsp reduced-fat finely shredded coconut for topping
Directions
Preheat oven to 350F.
In a medium bowl mix together dry ingredients. In a separate bowl mix together the wet ingredients. Combine wet into the dry and mix until batter is smooth.
Divide batter evenly among 6 donut molds. Bake 20-25 minutes or until toothpick comes out clean and donuts are set.
To make frosting, whisk all ingredients together with a mini-whisk.
When donuts have cooled for about 2 minutes, turn pan over onto cooling rack to "release" the donuts. Once they've had some more cooling time on the racks turn them over (or frost them bottom-up), apply frosting, and sprinkle on coconut. Enjoy!
**warning: if you're like me these donuts will not stay together very well. I've made them several times and each time they fall apart a bit when coming out of the pan. However, KEEP GOING with the recipe--frost them--eat them with your hands, all crumbled if you have to--and I bet you'll agree with me that it's worth it!! :)
