Ingredients

3 lbs tilapia fillets
2 onions, sliced
3 bell peppers with a range of colors, cut in strips
4 cloves of garlic, smashed then chopped
1 tsp Salt
2 tsppepper
3 tsp thyme
3 tbsp oregano
1/2 cup Dry White Wine
2 tbsp olive oil
Directions
Pre-Heat oven to 350 degrees.Heat a 10 inch skillet. Add olive oil and heat at medium-high heat until just shimmering. Add onions, bell peppers, and garlic to skillet. Reduce heat to medium-low. Cook veggies until translucent, about 10 minutes, then turn off heat.
In a 9"x13" casserole baking dish. Season fish on both sides and then place in 2 layers in pan. Spread cooked veggies and the juices produced from cooking evenly over fish. Pour wine evenly over the fish. Cover Tightly with foil and place in oven. Cook for 15 minutes. Take pan out of oven and remove foil. Plave oven on broil setting and return uncovered dish to oven until veggies are lightly browned, about 5 minutes.
Serve immediately.
