Ingredients

    - 2 tblsp extra-virgin olive oil
    - 1 1/2 c. chopped onion
    - 1/4 tsp sea or kosher salt
    - 3-4 large garlic cloves, minced
    - 3 c. chopped tomatoes (about 5 large)
    - 2 c. corn kernels (3 cobs of corn)
    - 2 c. lima beans (1 cup dried, soaked and cooked until tender
    - 3 tblsp thinly sliced fresh basil

Tips

A cast iron skillet is perfect for cooking and serving this dish.


Directions

Soak 1 cup dried lima beans overnight and cook until tender (not mushy). Heat oil in skillet, add onion and sprinkle with salt to taste. Sauté until soft and translucent, about 5 minutes. Add garlic; stir in tomatos, corn, and lima beans. Simmer until corn and lima beans are tender and tomatoes are soft; about 20 minutes. Stir occasionally. Season to taste with salt and pepper. Shred basil and stir in before serving.



Serving Size: makes 6 servings of 3/4 cup each.
