Ingredients

    Crust:
    Cauliflower, 1 head
    1 Egg
    Flax Seed, 1 tbsp
    Pinch of Salt

    Marinara Sauce:
    1 Tomato, medium
    Garlic, 1 clove, minced
    Olive Oil, 1tsp
    Tomato Paste, 1 tsp
    Italian Seasoning, 1 Tbs or to taste
    Pinch of Salt

    Cheese Sauce:
    Cashew Nuts, 1 oz, soaked
    Lemon Juice, 1 wedge yield
    Water to almost cover in blender
    Pinch of Salt

You can just take the recipe for the crust and add your own sauce and cheese.

You can top this pizza with any toppings you like and adjust the nutritional information.


Directions

Cheese Sauce: Soak cashews in water to cover for at least 20 minutes, if not over night. The will get larger and become softer. Put soaked cashews, plus some water into a blender with a squeeze of lemon juice. Add a pinch of salt, if you prefer. Blend until you get a smooth, creamy sauce. Taste and if it needs more zing, add some more lemon and salt. (Soy sauce may also be used to replace or in addition to lemon and salt, but many brands DO contain wheat.)

Marinara sauce: Core the tomato and score a cross with a knife in on the bottom. Drop into a pot of boiling water for 1 minute or until the skin begins to peel back. Take the tomato out and pull the skin off. Dice the tomato to preferred chunkiness. Heat a sauce pan and put in oil. When oil is hot, drop in minced garlic. Stir around for a minute, then add remaining ingredients. Smash the tomato chunks with a wooden spoon to release the juice into a sauce. Taste. If the sauce is too sweet, add more seasoning and salt.

Crust: Blend flax seeds into a course flour in a food processor. Chop up cauliflower and discard the stems. Steam until very soft. Add to food processor with a little of the boiling water to help it blend. (Be very sparing with the water in the beginning and only add what you need to get it blending.) Add a tablespoon of the cheese sauce. Blend until you have a dough consistency.

Take your dough and form it into a pizza crust on a cutting board, pizza sheet or cookie sheet. Use a spoon to spoon on the marinara sauce. Drizzle remaining cheese sauce on top. Bake at 425 until the crust browns.
