Introduction

Ingredients

    1 Can low sodium corn
    1 Can Black Beans
    1 Can diced tomatoes
    1/2 Package Taco seasoning

Tips

This is a great side with any mexican dish. Or eat it all by itself! You could add ground beef, chicken or any protein to it for hearty meal. Add hot sauce, Rotel tomatoes or jalapenos if you like it spicy. If you want it cold (very good cold too) you could cook and refrigerate overnight.


Directions

Open and drain the corn and tomatoes. Open the black beans and rinse in a strainer. Use a skillet on medium heat. Use a little spray oil on the pan. Add the corn. Stir and cook until the excess water is gone, about a minute. Add the beans and cook another minute while stirring it all together. Then add the can of tomatoes. Stir all together. Add 1/2 a package of taco seasoning and water according to the directions on the package. Simmer for 5 minutes.

Serving Size: 8 servings as a side dish
