Ingredients

    100 grams ground chicken breast
    1 apple, peeled and sliced
    1 serving Melba toast crumbs OR 2 teaspoons dry bread crumbs (optional)
    2 tablespoons chicken broth or water
    2 tablespoons apple juice
    1 tablespoon finely minced onion
    Dash each: garlic powder, onion powder, cinnamon, clove or nutmeg (optional), cayenne, Stevia (optional)
    Salt and black pepper to taste

Directions

Peel and slice the apple. Dice 2 tablespoons of apple and leave the rest in slices.

Combine ground chicken, diced apple, and dry spices (and optional melba toast crumbs or bread crumbs) in a small bowl. Add in the minced onion and apple juice and mix thoroughly. Form into 2-3 round patties and fry, along with the remaining apple slices, in chicken broth until fully cooked and lightly brown. Deglaze periodically with a little water to intensify the flavors and keep the patties moist.

Note: if you add the bread crumbs, increase the calorie count by the amount of one melba toast. Or the amount of 2 teaspoons dry bread crumbs (about 17 calories).

    Wow - This is really good! I didn't bother with the breadcrumbs, and I used 2 teaspoons frozen apple juice concentrate rather than 2 tablespoons apple juice. All the flavor with less liquid! And the apple slices caramelized nicely as they sauted with the sausage in the chicken broth! Yum! - 9/27/12
