Ingredients

Dry:
1/2 cup whole wheat flour
1/2 cup rolled oats
1/4 almond meal
1/2 cup semolina
1 tbsp chia seeds
1 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
Wet:
1 egg
1/4 cup milk
healthy dash of vanilla
up to 1/2 water as necessary
Tips
Keep the head on medium-low, flip the pancakes when there are bubbles evenly dispersed over the pancake.
Serve with hot butter and a little honey
Directions
Mix all the dry together thoroughly and then add the egg, milk and vanilla.
You'll want a pouring-batter consistency, so add water as necessary. The amount of water will change depending on the size of the egg and the humidity in the kitchen.
Use a 1/4 cup scoop to ladle out the batter onto a hot griddle, and keep the pancakes warm in a toaster oven until ready to serve (or just flip them off the stove and right onto hungry plates!)
