Ingredients

    2 medium carrots, sliced
    2 ribs celery, sliced
    1 cup quartered mushrooms
    3 T. butter
    3 1/2 cups chicken broth
    1 tsp dried parsley
    3/4 tsp ground black pepper
    1 tsp thyme
    1/8 tsp ground cloves
    1/2 tsp paprika
    24 oz. chicken breasts, chopped
    3/4 cup cooked wild rice
    1 1/2 cups half-and-half

Tips

The original recipe calls for water instead of chicken broth but I like the flavor better with the broth. If you decide to use water, be sure to add 1 tsp. of salt to the recipe.


Directions

In a large saucepan cook carrots, celery, and mushrooms in butter over medium heat until tender.

Add chicken broth, parsley, black pepper, salt, thyme, cloves, paprika, chicken, and wild rice. Cook and stir until bubbly and slightly thickened. Stir in the half-and-half and heat through.

Serving Size: Makes (8) 1 cup servings
