Ingredients

    2 t Extra Virgin Olive Oil
    1 Lg Carrot, Diced (89 g)
    3/4 c Sliced Mushrooms (53 g)
    1/2 t Black Pepper
    1 1/2 t Red Pepper Flakes
    1 1/2 t Italian Seasoning
    1 Lg Stalk Celery, Diced (53 g)
    1 Sm Spanish Onion, Diced (124 g)
    1/2 c Diced Red Sweet (Bell) Pepper, Diced (72 g)
    2 Garlic Cloves, Grated or Chopped to a Paste
    3 c Tomato Sauce (1 - 29 oz. Can)

Tips

Top with reduced fat parmesan or romano cheese and parsley to finish off (not included in nutritional info).


Directions

Heat a large saucepan over medium heat. Add olive oil, carrot and mushrooms. Cover and cook until carrot is al dente. Add seasonings and stir through, then add celery, onion and bell pepper. Cook just until onion is translucent but not brown. Add garlic, stir and let cook about 15 seconds. Add tomato sauce and stir.

Reduce heat and allow to cook for 20 min. Serve hot over pasta.
