Introduction

Number of Servings: 6

Ingredients

    1 lb. lean ground beef
    1 cup dry macaroni
    1/2 cup onion, diced
    1 small can diced green chilies
    1 can Hunts diced tomatoes, basil, garlic and oregano style
    8 oz. tomato sauce
    1 regular size packet of taco seasonings
    1 cup canned yellow corn, drained
    sliced green onions (scallions), for garnish
    .5 cup shredded low-fat cheese

Tips

Try adding a cup of canned black beans to this recipe for a tasty, high fiber twist!


Directions

Cook macaroni according to the directions on the box. In a separate pan, brown the ground beef and onions. Drain off any excess fat. Add the green chilies and corn. Heat through. Add the taco seasoning mix and stir until incorporated. Add the canned tomatoes, stir well, then add the tomato sauce. Bring to a boil, the turn down temperature and simmer for about 7 minutes. Add the cooked, drained pasta and stir. Let simmer for another 5 minutes to allow pasta to absorb sauce. Serve with a tbs. of shredded cheese and garnished with sliced green onions, if desired.
