Ingredients

    4-5 pastured eggs (depending on size - about 1 cup)
    12 oz. organic almond butter (no sugar/oil added)
    1 1/2 tablespoons lemon juice
    3/4 tsp baking soda
    1/4 tsp salt

Tips

This bread is delicious with butter, or toasted!


Directions

blend almond butter (including any floating oil) and eggs until well blended and smooth - add lemon juice and salt and blend for a moment. add baking soda, and blend thoroughly. Bake for 30 minutes in a small loaf pan ( 8ish x 4ish) that has been sprayed with coconut oil or lined with parchment paper. Let cool before slicing.

    No, Jlyn :) The recipe is accurate as listed.. the almond butter and the eggs give it structure - I hope you enjoy it! You can also prepare it with some stevia and dark chocolate chips added... and bake as 12 Muffins (sweet or not). Careful not to overbake!
