Ingredients

    2 eggs

    1 tbsp vanilla extract

    1 cup raw sugar

    1/4 tsp salt

    1/4 cup unsweetened applesauce

    1 cup whole wheat flour

    1/2 cup Dutch baking cocoa

    1 1/2 tsp baking soda

    2 cups grated zucchini

    1 cup special dark chocolate chips

Directions

Preheat the oven to 350 degrees

In a bowl, combine the eggs, vanilla extract, sugar, salt, and the applesauce.

In a separate, bigger bowl, combine the whole wheat flour, cocoa powder, and baking soda.

Add the egg mixture to the flour mixture and combine until the dry ingredients are mixed in well.

Add the grated zucchini and chocolate chips and mix well.

Pour the brownie batter into a greased 9" x 13" pan.

Bake at 350 degrees for about 30 minutes. Check to see if the brownies are done by inserting a toothpick into the center. If it comes out somewhat clean, they are done.

Allow to cool about 10 minutes before serving.

Serving Size: Makes 15 brownies
