Ingredients

    2 boneless skinless chicken breast cut into 1 inch chunks
    2 tbsp of extra virgin olive oil
    5 strips of bacon; cooked and crumbled
    3.5 cups of penne rigata; cooked and drained
    1 jar of alfredo sauce
    1 cup of shredded cheddar cheese
    1/4 cup of italian bread crumbs
    1/4 cup of parmesan cheese; grated
    1 tbsp unsalted butter; melted

Tips

I serve steamed vegetables on the side because my kids are picky, but feel free to add peas or broccoli to this dish.


Directions

While water is boiling for pasta cook bacon in one frying pan and in another heat olive oil and brown chicken (season with salt and pepper if you like) for 10-15 minutes. When bacon is done drain on paper towel and crumble. When chicken is done drain on paper towel. Drain pasta when it is done. Heat oven to 350. In a large baking dish mix pasta, chicken, bacon and alfredo sauce. Top with cheddar cheese. In a small dish mix butter, bread crumbs, and parmesan cheese. Sprinkle on top of cheddar cheese. Bake uncovered for 30 minutes.
