Introduction

Makes approximately 28 mini-muffins. Makes approximately 28 mini-muffins.

Ingredients

    2 cups cooked quinoa
    1 cup egg whites
    2 whole eggs
    2 cups fresh mixed vegs (spinach, zucchini, mushrooms)
    1/2 cup shredded reduced fat swiss or cheddar cheese
    1 Tbsp. Frank's hot sauce
    salt and pepper to taste

    Lightly grease mini-muffin pan. Mix egg whites with eggs. Add remaining ingredients. Place in mini-muffin pan.

Directions

Bake in 350 oven, 40 minutes. Let rest in pan 10 minutes. Remove from pan. Serve and/or freeze.
