These are fast, yummy and can be made ahead and even frozen. Time can be cut down if the veggies and cheese are purchased prepared. Use low fat cheese and home made BBQ sauce to cut fat and calories. Ingredients

1 pound beef cut in strips (or chicken)
1 small red onion
1 red sweet pepper
2 cups fresh mushrooms, sliced
2 cups shredded cheddar cheese
6-8 whole wheat wraps (depending on size)
Barbeque sauce
Ranch dressingHerbs and spices to taste
Directions
Makes 6-8 Fajitas: Preheat oven to 300 degrees F
Marinate the beef in the BBQ sauce for 6-8 hours (if your meat is a cheaper cut, ensure the sauce has some kind of acidic ingresient like lemon/lime juice or a touch of vinegar to break down the meat and make it more tender)
-Saute the meat in 2 Tbsp. olive oil
-Remove the meat and saute the vegetables in the liquid from the meat.
- Spread a small amount of Ranch (or whatever you prefer) dressing on each wrap
- Add 2 Tbsp. of meat and a mixture of veggies to the wrap and cover with shredded cheese.
- You can add more sauce if desired but not too much or the wraps will be soggy
- Fold up one end of the wrap and then wrap one side over and roll up
- Place on a lightly oiled baking sheet and cook until warm and the cheese is melted
