Ingredients

    1 1/2 cups uncooked wheat bran
    1 cup 1 % low fat milk
    1/2 cup unsweetened applesauce
    1 egg
    1/3 cup no calorie sweetner ( Stevia in the raw)
    1/3 unpacked brown sugar
    1/2 tsp vanilla
    1/2 cup all purpose flour
    1/2 cup whole wheat flour
    1 tsp baking powder
    1 tsp soda
    1/2 tsp table salt
    1 cup blueberries

Tips

You can beat the egg white separately, as that is suppose to help fluff up the muffins. I also add 2 tsp wheat gluten.


Directions

Soak bran in milk 10 min, then add the applesauce, sweetner, brown sugar, vanilla, flours and baking powder and soda.
Add the egg.
Bake approx 20 min, do not overbake.
