Number of Servings: 4

2/3 cup smooth, unsalted peanut butter (Laura Scudder's)
1/4 cup low-sodium soy sauce or Bragg's Liquid Aminos
    3 cloves garlic, minced
juice of 1 lime (about 1-2 Tbsp)
    water or vegetable broth
    3 scallions, sliced diagonally
    sesame seeds
1/2 pound whole wheat spaghetti, cooked

This is also good served as a cold pasta salad. Try adding bell pepper strips and cucumber after chilling.

Cook whole wheat spaghetti noodles according to package directions.

Over low heat in a small sauce pan, combine peanut butter, soy sauce or Bragg's, garlic and lime juice. Slowly stir in water or vegetable broth until desired consistency is achieved.

Pour sauce over cooked noodles and garnish with scallions and sesame seeds.
