Number of Servings: 6

Ingredients

    1 can white beans, drained and rinsed
    1 can low sodium black beans, drained and rinsed
    2 cans chunk light tuna in water, drained
    1/2 bag frozen yellow corn, thawed
    1 can black olives (I used small size)
    2 cups torn spinach leaves
    4 scallions, chopped (I use white and green parts)
    2 medium tomatoes, chopped and seeded
    3 mini cucumbers, peeled and chopped
    3 baby bell peppers, chopped
    1/2 cup light cesar dressing (I use Ken's)
    I also chopped a few raw mushrooms, only because I'm trying to learn new tastes/ textures (I usually love mushrooms smothered in butter lol)

Directions

Toss it all together! I ate my first portion right away, but what sits will soak up the dressing and taste pretty fabulous later on.

Serving Size: Calorie count is for 6 servings, thought I believe it may make more
