Ingredients

    1/2 cup shredded chicken, cooked
    1 cup rice, cooked
    1 carrot, chopped
    1/4 of an onion, diced
    2 cloves garlic, minced

    Broth:
    1 cup chicken broth
    1/2 cup water
    Herbs de Provence
    Cumin
    Red pepper flakes

Tips

If the porridge gets too dry, add more water -- don't add more chicken broth, or it will get too salty.


Directions

Mix chicken broth, water, and spices in a small pot. Add chicken, rice, carrot, and onion. Wait to add garlic until carrots are tender, but still have a bite and a raw taste (you know, how stewed carrots are sweet, but raw carrots have a distinct taste). Cook until carrots are soft and sweet.

Serving Size: Makes 2 lunch-sized portions
