Ingredients

    Cod fish, 100 grams, diced
    Mixed Vegetables, frozen, 100 grams
    Onions, raw, 0.5 slice thin
    Garlic powder, 2 tsp
    Garlic, 2 cloves, chopped
    Lemon Juice, 1 wedge yields
    Celery, raw, 1 stalk, medium, thin sliced
    Salt, 0.25 tsp
    Pepper, white, 0.5 tsp
    Dried Basil, 0.5 tsp
    Olive Oil, 2 tbsp
    Ginger, ground, 0.5 tsp

Directions

1. Boil water, and boil the frozen mixed vegetable for 5 minutes. Drain aside.
2. Heat the Olive oil in a sauce pan
3. Add in chopped garlic, sliced onions, and ground ginger, cook for a minute.
4. Add fish cubes. cook on medium heat for 2 minutes
5. Add 600ml of water, season with salt, pepper, Garlic powder.
7. Allow the soup to boil for 5 minutes
8. Add in the mixed vegetables, dried basil and sliced celery
9. Add lemon Juice from a thick lemon wedge
10 Cook for another 3 minutes and ready to served

    Very Good
    This is surprisingly good! Love the colorful vegies and light broth base. I used fresh carrots, broccoli, zucchini and sauteed them first. Also added some thawed frozen spinach and used Pollack fish...very mild tasting. Thanks! - 10/20/09
