Introduction

Using Jerk Chicken using another recipe (bottled marinade), Jerk Salad Dressing (another recipe), Mandarin oranges and fresh baby spinach, this is a spicy slightly sweet treat that's good on the waistline. This would also taste great with dried cranberries, and toasted almond slices. Ingredients

    Spinach, fresh, 3 cup (enough to fill a dinner plate nicely)

    Chicken Breast, no skin, 0.25 breast, bone and skin removed (use the Jerk Chicken recipe, 1/4 breast is really 1/2 of one palm sized peice of chicken)

    Andi's Jerk Salad Dressing, 1 serving (see my recipe)

    *Dole Mandarin Oranges, 0.25 cup (a few slices)

Directions

Lay fresh clean, dry baby spinach on a dinner plate. Top with a pile of sliced jerk chicken, arrange mandarin orange slices, and drizzle with Andi's Jerk Salad Dressing (a couple of tablespoons should do it). Optionally drizzle a little honey ontop it sweetens it a little more and cuts the spiciness.
