Ingredients

    2 cups oat bran hot cereal, uncooked
    1/4 cup Splenda blend brown sugar
    2 tsp. baking powder
    1 cup skim milk
    2 egg whites or 1/2 cup egg substitute
    6 Tbsp. flax seed meal

Tips

Instead of blueberries you can add 1/2 cup mashed, ripe banana. Of course any berry will do! I like to add 1 tsp. cinnamon to the batter.


Directions

Heat oven to 425 degrees. Spray muffin pan or use paper liners. Combine dry ingredients and mix well. Add rest of ingredients one at a time, except blueberries. Add blueberries and just lightly fold. Pour into muffin cups, fill 3/4 full.

Serving Size: Makes 12 regular muffins.
