Introduction

Eggs and other unhealthy/high calorie portions of a traditional caesar salad have been replaced with citrus juices. Delicious with Shrimp, but could easily do chicken as well. Ingredients

    1 tablespoon of dijon mustard
    1 tablespoon fresh lemon juice
    1 tablespoon of fresh lime juice
    1 teaspoon of orange juice concentrate
    1 teaspoon Worcestershire sauce
    1/2 teaspoon minced garlic
    3 tablespoons olive oil
    1/4 cup grated parmesan cheese
    1/2 pound large, raw shrimp, pealed
    4 cups of romaine lettuce
    croutons

Directions

Preheat grill or boiler. Combine mustard, citrus juices, Worcestershire sauce, garlic, and dash of salt in a bowl. Gradually add olive oil with whisk, then stir in cheese.

Brush shrimp with oil and season with salt and pepper to taste, then grill or broil until firm and bright orange (about 2 minutes). Toss everything together in a large bowl, divide, and enjoy!
