    1.5 cups yellow cornmeal
    .5 cup whole wheat flour
    2 tsp baking powder
    1 tsp salt
    1 tbsp wheat gluten
    6 tbsp splenda
    2 large eggs
    3 jalapeno peppers, seeded and finely chopped
    1 cup milk
    1/2 cup unsweetened applesauce


The gluten helps whole wheat flours to rise well, even in quick breads. Toss a tablespoon into your whole wheat pancakes next time and see if they don't rise, too!


Preheat oven to 400 degrees. Combine dry ingredients in a mixing bowl. Combine eggs, milk, and applesauce in another bowl. Fold into dry ingredients and add jalapenos. Stir until just combined. Pour into greased 9 inch baking square. Bake in 400 oven for 20 minutes.

Serving Size: Makes 9 3 inch squares
